salted + dark chocolate + peanut butter + walnut + spelt flour cookies

I realized something the other day, I do not have a single cookie recipe on my blog. Not a single one. I mean isn’t that like some kind of food blogging crime, not a single cookie recipe?

Well today that changes, today I made you a cookie and not just any cookie a mash up cookie of two very common household favourites, chocolate chip and peanut butter. Now I realize I am probably not the first to create such a cookie, I am not going to be going up for any genius combining awards I totally understand. But there is something special about my particular peanut butter chocolate chip cookie...

This cookie is damn good, like really damn good! It has just the right amount of peanut butter to chocolate ratio; there are also walnuts in the mix for a little texture. It is soft and buttery on the inside with a slight crunch on the outside and it is sprinkled with Himalayan salt, because well salt and sweets just go hand in hand for me.

I used natural peanut butter, which I think by now almost everyone uses right? Or at least everyone should use I hope because any other kind is just discrimination to actual peanut butter I believe I also don’t use chocolate chips, I use real dark, like at least 75% or more dark chocolate that I roughly chop up myself. Do it, don’t skimp on the chocolate and don’t skimp on the chopping step. When you chop chocolate yourself you get all the extra flakes and bits and when you throw that all into the batter it adds even more chocolate flavour than you can imagine. Plus it melts into the batter and spreads out more than normal chocolate chips ever will. Just trust me it is worth it.

And then there is the spelt flour, I love spelt flour. I love its nutty flavour, which goes really well with the peanut butter in this cookie. It also gives it a bit of a hearty feel without being too heavy, if that makes sense. 

I am extremely happy with this cookie, I couldn't ask for a better cookie debut for my blog really. So here is to the first of many more cookies recipes to come, I can still hardly believe this is my first of the bunch. It is a true cookie collaboration celebration!


Salted dark chocolate + peanut butter + walnut + spelt flour cookies

ingredients

2 cups spelt flour

1 tsp baking soda

¼ tsp Himalayan salt + extra for sprinkling on top

1 cup of natural peanut butter

3 tbsp of peanut butter oil or melted coconut oil

¾ cup maple syrup

1 tbsp vanilla

¼ cup coconut milk

100 grams dark chocolate (roughly chopped)

1 cup of walnuts

Preheat the oven to 350 degrees

In a large bowl mix the flour, baking soda and salt.

In a medium size bowl whisk together the peanut butter, peanut butter oil (this is the oil that sits on top of natural peanut butter, if your jar doesn’t have any you can use melted coconut oil), maple syrup, vanilla and coconut milk.

Add the wet mixture to the dry and mix until just incorporated. Roughly chop your dark chocolate and walnuts and add to the cookie mixture.

On a parchment lined baking sheet, roll the mixture into 2 inch balls (this recipe should make about a dozen cookies) and place evenly apart on the baking sheet. Press down each ball slightly with your fingers, sprinkle with Himalayan salt and bake for 11-15 minutes.

They will be golden brown and barely baked leaving them incredibly soft in the middle. Allow them to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
