fa la la la, la la la tis' the season for allll the freakin cookies to be made my sweet friends! it is also time once again for an annual cookie-a-thon. that's right, katherine of Katherine in Brooklyn and madeline of Madeline Marie Blog have put together another blogging cookie swap party! below you will find links to all sorts of festive christmas cookies for all your holiday baking needs.
it is my mission to create a new shortbread recipe for you as each year passes. it's seriously the best cookie base to create all the flavours you can think of. last year i shared a flaxseed & pistachio shortbread cookies + white chocolate pomegranate ganache and this year i am adding in a citrus touch.
orange zest, almond and dark chocolate shortbread cookies. you guys, these cookies are real good. it is the perfect amount of orange, not too overpowering but just enough to get your tastebuds all happy. as for the almond and chocolate well, orange, almonds and chocolate really just goes together like fine wine and roast lamb (i literally couldn't think of another pairing haha).
no joke, before this first batch was even half gone paul was asking me to make another so you know dem' cookies be good! any who i am off to check out all these other delicious sounding (and looking) cookies and trying not to think of my pant size once this holiday season is over with, remember tis' the season haha

orange zest + almond + dark chocolate shortbread cookies
1 cup butter
1/2 cup icing sugar
2 cups all-purpose flour
1/2 tsp salt
1 tbsp fresh squeezed orange juice
zest of one orange
1 tsp pure vanilla
1/4 cup chopped almonds
1 cup melted dark chocolate
preheat the oven to 350 degrees.
in the bowl of a standing mixer cream the butter and icing sugar together. add in the salt, flour, orange juice, orange zest and vanilla and mix until combined.
next add in the chopped almonds mixing throughly with a wooden spoon.
on a lightly floured surface roll out the cookie dough to about 1/4 inch thick. cut out cookies with a cookie cutter, you can do any size or shape, get crazy will ya!
place the cookies on a parchment lined cookie sheet and bake for 18-20 minutes.
cool the cookies on a cooling rack before dipping in melted dark chocolate.
melt the dark chocolate in a double broiler, sprinkle the cooled cookies with a dusting of icing sugar and then dip half the cookie into the dark chocolate.
